Considerations
Use fresh, soft marshmallows. It might be tempting to use stale ones, but they are harder to melt, stir and create a harder end product.
Plant based butter is a totally acceptable substitute here and makes no difference in the end result.
I generally double this recipe whenever I make it and put it into an 11x18" (3 qt) glass baking pan instead
Ingredients
Instructions
Grease a 9x13" baking pan.
Melt the butter over medium heat in a large pot. The more space you have, the easier this will be.
Once the butter is melted, add the marshmallows. Continue stirring until the marshmallows are completely melted
Remove from heat and immediately add the vanilla extract.
Start folding in the cereal. Often this is easier to do in parts, only pouring some of the cereal in at a time until it is all mixed.
Using a silicone spatula, move the mixture into your pan. Use as little pressure as possible to spread these out across the whole pan.
Allow the treats to set for 1 hour at room temperature. Cover tightly if you are leaving them out to keep them softer.
