Preheat your oven to 375°F.
Cook bacon in skillet until crispy.
Remove bacon and set aside.
Add potatoes to same skillet.
Cook potatoes until golden brown.
Whisk eggs with cream in bowl.
Add salt and pepper to mixture.
Pour egg mixture over potatoes.
Sprinkle bacon and cheese on top.
Cook on stovetop for 3 minutes.
Transfer skillet to preheated oven.
Bake for 15-20 minutes until set.
Garnish with fresh chives before serving.
