Turmeric Ginger Farro Baked Tilapia
  1. Roast sweet potatoes on greased pan for 10-15 minutes at 375 degrees.

  2. In large pan, heat sesame oil. When hot, add garlic, shallot, and ginger. When partially cooked, add peas, carrots, turmeric, fish sauce, and salt. Allow carrots and peas to cook halfway before adding the roasted sweet potato and cooked faro. Stir all ingredients together and set aside, keeping the pan warm.

  3. Preheat oven to 375. Wash and dry tilapia fillets. Place on greased baking pan. Sprinkle each side with salt, pepper, and chill powder. Squeeze lemon juice evenly on each fillet. Bake for 20-25 minutes.

  4. Serve tilapia with faro, with a side of tahini dressing and fresh lemon.
