Almond Pastry
  1. Beat the butter and sugar until creamy. Add the ground almonds, vanilla, egg white, and cream or milk, mixing until a smooth, spreadable almond cream forms.

  2. Unroll the puff or laminated pastry and spread the almond cream evenly over the entire surface.

  3. Roll the pastry up tightly from the long side.

  4. Chill the roll for about 10–15 minutes so it's easier to slice cleanly.

  5. Cut the roll into slices about 4.5 cm (1¾ inches) wide (you should get about 8–9 pieces).

  6. Using a chopstick or similar stick (e.g. a sushi stick), press firmly once into the center of each piece, then remove it.

  7. Place the pastries with space between them on a baking sheet lined with parchment paper.

  8. Whisk the egg yolk with the milk, gently brush the pastries, and sprinkle with sliced almonds.

  9. Bake in a preheated oven at 180 °C / 350 °F (top/bottom heat), middle rack, for 18–22 minutes until golden.

  10. Remove from the oven, let cool, and lightly dust with powdered sugar if desired.
