Preheat oven at 425°. Place the muffin pans in the oven during the preheat process so the pan is hot.
Microwave oil and milk until warm before adding ube extract, flour, and miso. The warm oil and milk will hinder gluten formation so your pop overs are airier.
Add the eggs and mix until well incorporated. Set aside.
Remove the muffin pan out of the oven and butter the entire pan (not just the mold but also the top part).
Bake at 425° F for 15 minutes then lower the temperature to 325° F 15 minutes.
Optional: Drizzle with condensed milk or top with cheddar cheese. You can even fill with custard, buttercream, frosting, honey butter, or anything else, like plain butter or Greek yogurt.
