Asian Peanut Chicken Salad
  1. Dice 1 cup of cabbage into small pieces

  2. Cut ½ cup of cucumber into small pieces, removing the insides to prevent the salad from being watery

  3. Dice 1 carrot and 1 green onion

  4. Dice 1 apple into small pieces

  5. Cut 2 cups of chicken breast into small pieces

  6. In a bowl, combine 2 tbsp soy sauce, 3 tbsp peanut butter, juice of ½ lemon, 1 tbsp honey, 2 cloves garlic, ½ tbsp sesame oil, and 1 tbsp rice vinegar to make the sauce

  7. Mix all the vegetables and chicken together

  8. Pour the sauce over the salad and mix well

  9. Top with nuts, seeds, and sesame seeds as desired

  10. Serve with crackers
