460 milliliters of water
1 tablespoon apple cider vinegar
20 grams of psyllium husks
100 grams of whole-wheat buckwheat flour
100 grams of whole grain rice flour
100 grams of flax flour or lentil flour (has a better taste)
1 - 1.5 teaspoons of salt
1 teaspoon bread spice
1 teaspoon of tartar packing powder (optionally 1 weak teaspoon of baking soda)
After baking, carefully take out the bread.
Attention: never measure the temperature of this bread or test the dough with a skewer!
If you do not get one of the "flour types" mentioned above, you can easily exchange it for a comparable type. For example against teff flour, oat flour, hemp flour, lentil flour, tiger nut flour.
Unfortunately, flax flour doesn't really have a lot of taste, so you should season your bread well or use lentil flour directly. I also often use lentil flour, but I didn't have it in stock)
