Shredded Tofu Burrito
  1. Grate the tofu using a cheese grater, as you would a block of cheese.

  2. Bring a non stick pan to medium/high heat with the olive oil. Add the tofu and all the spices, salt and sugar to the pan and give it a good toss to evenly coat the tofu. Fry until the tofu starts to crisp up then turn off the heat.

  3. Make a chipotle and yogurt sauce by mixing together the yogurt and chipotle in a small bowl.

  4. Heat up the tortillas in the microwave for 10 - 15 seconds then fill with the rice, beans, tofu, avocado, chipotle sauce, tomato, red onion, coriander and a good squeeze of lime.

  5. Wrap up the burritos and enjoy!
