Escarole & Beans
  1. Open all 3 cans of cannellini beans. Drain the liquid from only one can.

  2. Add one can with its liquid to a blender and blend until smooth.

  3. Bring one large pot of salted water to a boil. Add all the greens to the boiling water and parboil for 5 minutes, strain, and set aside.

  4. To the same pot, add ¼ cup of olive oil and garlic. Heat over medium heat until the garlic starts to turn golden, then add Calabrian chili pepper, beans, bean puree, salt, and all the greens.

  5. Turn the heat to low and let it cook for 5 more minutes. Remove from heat and pour over grilled bread.
