Vegan Chickpea Frittata Muffins
  1. Preheat oven to 375°F and prepare muffin tin

  2. Mix chickpea flour, nutritional yeast, baking powder, garlic, basil, and salt

  3. Whisk in water until smooth

  4. Fold in corn, bell pepper, jalapeño, onion, and greens

  5. Scoop ¼ cup of batter into muffin tin holes

  6. Top with chives if desired

  7. Bake 35–45 minutes until toothpick comes out clean

  8. Cool on wire rack before serving
