French Chocolate Mousse
  1. Melt the bittersweet chocolate with soft unsalted butter

  2. Whip the egg whites to soft peaks with a pinch of salt and sugar to stabilize

  3. Whip the egg yolks and temper them slowly with the chocolate mixture

  4. Combine the sugar and water

  5. Fold the whipped egg whites into the chocolate mixture

  6. Add whiskey to the mousse

  7. Chill and serve
