Preheat oven to 375°F (190°C).
Grease a 9-inch pie dish or baking dish lightly with oil or butter.
Heat olive oil in a skillet over medium heat.
Sauté onion for 2–3 minutes until soft. Add garlic and spinach, cooking until spinach wilts. Remove from heat.
In a large bowl, whisk together eggs, cottage cheese, milk, salt, pepper, paprika, and oregano until smooth.
Stir in shredded cheese and cooked spinach mixture.
Pour mixture into prepared baking dish.
Bake for 35–40 minutes until the center is set and the top is lightly golden.
Let quiche rest for 5–10 minutes before slicing.
Serve warm with salad, toast, or roasted potatoes.
