Prepare Your Ingredients: Mince your garlic, chop the chilies, and wash and dry the basil leaves.
Stir-Fry the Aromatics: Heat a large skillet or wok over medium-high heat and add the oil. Once hot, add the garlic, chilies, and shallots. Stir constantly for about 20–30 seconds until fragrant.
Cook the Chicken: Add the ground chicken directly to the pan. Break it up quickly with a spatula and stir-fry until it’s just cooked through.
Build the Sauce: Pour in the oyster sauce, soy sauce, fish sauce, and sugar. Stir well so every bit of chicken is coated.
Finish with Thai Basil: Turn off the heat and immediately toss in the Thai basil. Stir until the leaves wilt from the residual heat.
