Better Chocolate Babka
  1. Combine the flour, sugar, yeast, and zest in the bottom of the bowl of a stand mixer.

  2. Add eggs and ½ cup water, mixing with the dough hook until it comes together.

  3. Add salt, then the butter, mixing until incorporated.

  4. Mix on medium speed for 10 minutes until dough is completely smooth.

  5. Coat a large bowl with oil and place dough inside, cover with plastic and refrigerate for at least half a day.

  6. Melt butter and chocolate together until smooth, then stir in powdered sugar and cocoa.

  7. Spread half of chocolate mixture evenly over the rolled-out dough, leaving a ½-inch border.

  8. Roll the dough up with the filling into a long, tight cigar and seal the dampened end.

  9. Cut the log in half lengthwise and twist the two halves together.

  10. Cover with a damp tea towel and leave to rise for 1 to 1 ½ hours.

  11. Preheat oven to 375°F (190°C) and bake for 30 minutes.

  12. While baking, make syrup by bringing sugar and water to a simmer until sugar dissolves.

  13. Brush syrup over the baked babkas and let cool before serving.
