Blueberry Sheet Pan Pancakes
  1. Preheat your oven to 425°F. Grease a 8x8” square pan or 8” heart pan with cooking spray and set aside.

  2. In a large mixing bowl, combine the oat flour, flaxseed, baking powder, and salt.

  3. In another mixing bowl or large liquid measuring cup, whisk together the milk, liquid sweetener, egg, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.

  5. Pour the batter onto your greased pan and use a spatula to smooth it out evenly.

  6. Bake for 15 minutes, or until the top is dry to the touch and the center is cooked through. Once cooked, let cool for 5 minutes in the pan.

  7. Then in true Cheerful Choices manner… slice and serve with more blueberries any toppings of your choice!

  8. Store any leftovers in an airtight container in the fridge for 3-5 days.
