  1. Heat olive oil, eggplant, onion and pepper in a skillet on medium-high for about 3 minutes, stirring occasionally.

  2. Add in tofu, mushrooms and spices and continue to cook, stirring and mashing tofu, for about 2-3 minutes.

  3. Sprinkle with salt and pepper and serve with a side of avocado and salsa.
