Preheat your oven to 350 degrees F. Prepare an 8 x 4 loaf pan by lining it with parchment paper and spraying it with nonstick cooking spray to prevent sticking.
In a large mixing bowl, combine the yogurt, eggs, maple syrup, vanilla extract, and almond extract. Whisk these ingredients together until they are well blended.
Next, add the dry ingredients to the bowl: oat flour, almond flour, sprinkles, baking soda, and salt. Use a wooden spoon to mix everything together until fully combined.
Pour the batter into the prepared loaf pan and top it with 2 tablespoons of sprinkles.
Bake in the preheated oven for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, let the bread cool in the pan for 5 minutes before transferring it to a wire rack.
Allow the bread to cool for at least 15 minutes before slicing. Enjoy a warm slice with butter or vegan butter and a drizzle of maple syrup if you like.
