Mix 150g prepared brown crabmeat with 2 tbsp of good-quality mayonnaise, season and add juice of ½ lemon to taste. Check 250g prepared white crabmeat carefully for bits of shell.
Toast 8 crumpets on both sides until golden.
To serve, spoon the brown meat on to the crumpets then pile the white meat on top. Finish with a small handful of salad leaves and leafy herbs.
