In a small bowl, add the cottage cheese and egg. Stir well (or blend) until the mixture is smooth and fully combined.
Add almond flour, baking powder, and a pinch of salt. Gently mix until just combined, then let the batter rest for 1 minute to thicken slightly.
Spoon the batter onto parchment paper and gently shape it into a round. Air fry at 350°F (180°C) for 10–12 minutes, until puffed and golden. Alternatively, bake at 350°F (180°C) for 14–16 minutes, until lightly golden and set.
Allow it to cool for a minute or two, then enjoy as-is or slice in half to make a protein-rich breakfast sandwich.
