Add 4 tablespoons of butter to a large soup pot over medium high heat
Add chopped onion, grated carrots, and sliced celery and stir to coat in butter
Add salt, dried thyme, and pepper
Cook for about 7 minutes until vegetables are soft
Add garlic and flour, stir together and cook for 2 minutes
Add 1 cup of half and half and stir until smooth
Stir in second cup of half and half, then add chicken broth
Stir together and let it come to a simmer
Add pulled rotisserie chicken, gnocchi, and spinach
Simmer for 5 minutes, stirring occasionally
Taste and adjust salt as needed
Serve with garlic breadsticks for dipping
