Chicken Gnocchi Soup
  1. Add 4 tablespoons of butter to a large soup pot over medium high heat

  2. Add chopped onion, grated carrots, and sliced celery and stir to coat in butter

  3. Add salt, dried thyme, and pepper

  4. Cook for about 7 minutes until vegetables are soft

  5. Add garlic and flour, stir together and cook for 2 minutes

  6. Add 1 cup of half and half and stir until smooth

  7. Stir in second cup of half and half, then add chicken broth

  8. Stir together and let it come to a simmer

  9. Add pulled rotisserie chicken, gnocchi, and spinach

  10. Simmer for 5 minutes, stirring occasionally

  11. Taste and adjust salt as needed

  12. Serve with garlic breadsticks for dipping
