Dice 5 large tomatoes
Dice 2 cloves of garlic
Heat pot on high and add 1.5 tbsp of beef tallow or any cooking oil of your choice
Add in garlic and stir until fragrant
Add in ground pork and stir fry until well cooked
Add a splash or two of soy sauce
Add in tomatoes and mix well
Cover with lid and turn down heat to medium once liquid boils
Let the tomatoes reduce until mostly liquid, about 15 minutes or more
Add in 2 beaten eggs and stir quickly
Add salt to your liking
Make a cornstarch slurry with 1 tbsp cornstarch and 2 tbsp water, mix until blended and add into pot
Stir until thickened
Serve with a bowl of rice
Add chili flakes if desired for spice
