Tomato Egg Ground Pork Rice Bowl
  1. Dice 5 large tomatoes

  2. Dice 2 cloves of garlic

  3. Heat pot on high and add 1.5 tbsp of beef tallow or any cooking oil of your choice

  4. Add in garlic and stir until fragrant

  5. Add in ground pork and stir fry until well cooked

  6. Add a splash or two of soy sauce

  7. Add in tomatoes and mix well

  8. Cover with lid and turn down heat to medium once liquid boils

  9. Let the tomatoes reduce until mostly liquid, about 15 minutes or more

  10. Add in 2 beaten eggs and stir quickly

  11. Add salt to your liking

  12. Make a cornstarch slurry with 1 tbsp cornstarch and 2 tbsp water, mix until blended and add into pot

  13. Stir until thickened

  14. Serve with a bowl of rice

  15. Add chili flakes if desired for spice
