This is my lucky cupcake, my ace in the hole crowd pleaser. Arguably the best of my best.
It's a banana based cake, which makes it so fluffy, moist and soft that you will all simply pass away. As I understand it, this is a desirable result in modern times. I am the Jim Jones of cupcakes. Hooray. It's swirled with an espresso cream cheese frosting, and a homemade salted orange blossom caramel filling and drizzle. Eventually I started topping it with pretzel, for those of you who can experience multiple consecutive orgasms. To everyone else, I still love you, take your Zoloft.
I add a few tablespoons of the salted caramel to the cupcake batter as well as some coffee powder. The caramel filling gets half soaked into the cake and it is fucking unholy. Don't let caramel scare you! Hot sugar always scared me at first. Timing and temperature is everything. But with a little courage to practice more than once, willingness to keep a sharp eye and follow the recipe to a T, and hopefully some kind of kitchen thermometer, you can get so good that you become the one writing the recipe. Like I am fucking doing now. Hahaaaaa.
