Coconut Lemongrass Chicken
  1. Combine the chicken breasts with salt, black pepper, cumin, turmeric, and chilli powder.

  2. Heat the groundnut oil in a pan and sauté the shallot, garlic, and red chilli until fragrant.

  3. Add the seasoned chicken breasts and cook until browned on both sides.

  4. Pour in the coconut milk and chicken bone broth, then stir in the lemongrass paste and lemongrass stalks.

  5. Bring the mixture to a simmer and cook for 15-20 minutes, or until the chicken is cooked through.

  6. Remove the lemongrass stalks and stir in the lime juice and zest.

  7. Serve the coconut lemongrass chicken over cooked white rice, with pak choi on the side.

  8. Garnish with chopped cashew nuts, black sesame seeds, and sliced spring onions.
