In a bowl, mash up some smoked tofu and chickpeas
Add chopped onion, garlic, chilli flakes, all spice, smoked paprika, parsley, tomato paste and seasoning
Mix it all together and stuff it into pita pockets
Cut those in half to form quarters
Cover in olive oil and fry them on a griddle pan, cast iron skillet or use a George Foreman like I did
Fry on each side for about 2-3 minutes
I popped mine in the air fryer for 5 minutes at 200c afterwards to make sure they were cooked through. You can add yours to the oven too
Make the tahini sauce by mixing tahini, salt, lemon juice and warm water
Mix until it's smooth adding more water or lemon if necessary
I topped mine with sumac
Dip your arayes in and enjoy
