Boil water for pasta. Grill sausages. Slice into wheels and halves.
Trim leeks and wash. Use bottom ⅔ and slice into rounds.
Cook pasta.
Heat oil in a large frying or sauté pan over a medium heat. Add leeks and sauté until softened, about 5min. Add sausages and shallots, cook stirring 1min. Add half the butter and all of the stock, reduce heat and simmer 5min. Season with salt & pepper.
When pasta al dente, drain and return to pot. Add leek sauce with remaining butter and Parmesan, toss well and serve.
NOTES: I use more sausage and less pasta especially for 4 or less. Wait to add Parmesan until you serve.
