Cook any noodles of choice; drain and reserve the starchy cooking water. Immediately toss the noodles with a splash of sesame oil to prevent it from clumping and set aside.
In a heat proof bowl, mix together the garlic, ginger, gochugaru, scallions, and sesame seeds.
Pour 1.5-2 tbsp hot sesame oil on top and let it sizzle. Give it a mix, then stir in the soy sauce, rice vinegar or lime juice, sesame paste or tahini, peanut butter, and optional hot sauce/chilli oil and black tea.
Stir it will, then add a splash of the starchy noodle water and a dash of brown sugar/ honey (optional for sweetness). Mix until your sauce comes together with a smooth consistency.
Pour the sauce over the noodles and serve it cold, garnished with sliced cucumbers, scallions and/or sesame seeds.
