Chinese Roast Chicken
  1. Rub an ample amount of rock salt onto the chicken

  2. Rinse the chicken

  3. Pour boiling water over the chicken

  4. Mix naturally brewed soy sauce, rice wine, and ginger juice

  5. Brush the soy sauce mixture onto the chicken until fully coated

  6. Air-dry the chicken preferably overnight

  7. Brush the chicken with a mixture of sesame oil and salt

  8. Roast the chicken over a wire rack at 180 degrees Celsius for 1 to 1.5 hours depending on size

  9. Check that internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius)

  10. Let the chicken rest for 10 minutes before carving
