Heat the oven to 200C fan
Place the chopped peppers and onion in a roasting tin with the tomatoes, chorizo and gnocchi
Add the fajita mix to a small bowl and stir in the olive oil until you have a smooth runny paste
Roast in the oven for 30 minutes, turning the mixture over once or twice
5 minutes before the traybake is due out of the oven, make the nacho sauce by tearing the cheese slices into 3 or 4 pieces and placing them in a microwave proof bowl
Add the milk to the cheese
Microwave for 1 minute, stirring once halfway through, then stir until smooth
When the gnocchi and veg are roasted, remove them from the oven and season with salt and pepper
Turn them over until coated in the chorizo oil
Drizzle with the nacho sauce before serving with salad and tortillas
