Preheat your oven to 415°F
Cut broccoli into smaller florets so they cook faster and roast evenly
Toss broccoli into an oven safe dish along with quartered onion and fresh garlic. Drizzle with olive oil, add oregano, chili flakes, salt, and pepper. Place feta in the corner. Roast for 30 minutes until roasted and slightly crispy
Add roasted veggies to a blender with bone broth, cottage cheese, baby spinach, lemon zest, and lemon juice. Blend everything until smooth and creamy
If cooled down, warm it up in a pot, then taste and adjust to ensure it has enough salt and lemon juice
Plate it up and garnish with fresh dill, chili flakes, and finely shredded manchego or parmesan cheese
