Preheat the oven to 350 F
Prepare the filling by combining almond flour, sugar, egg, vanilla, almond extract, cinnamon, and soft butter until a paste forms
Prepare the simple syrup by simmering sugar and water on medium heat for 5-10 minutes until golden color is achieved
Pour simple syrup into bowl and set aside
Slice croissants and dip the top in the simple syrup
Place on parchment paper and add the filling in the center, then also add some of the filling on top
Sprinkle with almond slices and cinnamon
Bake for 15 minutes or until golden brown
Dust with powdered sugar and enjoy
