For the crispy croutons, roast lots of oil, salt, pepper, and garlic powder at 400 for about 15 minutes until crispy.
For the crispy breadcrumbs, in a medium heat pan with oil (can use butter too), add some panko bread crumbs and salt and pepper. Keep an eye on it, stir, and toast till golden brown.
Wash and thinly slice your kale and romaine separately.
Massage the kale with olive oil and salt or with the dressing for 1-2 minutes to make it tender.
Toss the massaged kale with the romaine and add more dressing.
Top with crispy chickpeas, bread crumbs, and shaved parm.
