Set oven to 200°C (400°F).
Toss potatoes, carrots, peppers, and broccoli with 2 tbsp olive oil and all seasonings.
Rub thighs with 1 tbsp olive oil, salt, and pepper.
Spread veggies evenly, then nestle chicken on top.
Bake uncovered 40–45 minutes, flipping halfway, until golden and cooked through.
Garnish with parsley and serve warm.
