Hidden Veggie Turkey Maple Breakfast Sausages (gf, Df)
  1. Add all of the ingredients (except for the avocado oil) to a large mixing bowl and gently combine with your hands until evenly distributed.

  2. Stovetop method: Roll the turkey maple sausages into about 3"x1" sausages. Heat avocado oil in a large nonstick skillet over medium low heat. Add the sausages and cook for 3-4 minutes on 3 sides. Remove from heat and allow to cool.

  3. Oven method: Preheat the oven to 350. Line a sheet pan with parchment paper. Form the turkey sausage into about 3"x¾" patties and place on the sheet pan (these won't spread out so they can be fairly close together). Bake for 22 minutes. Remove the oven and allow to cool.
