On low heat, melt sugar while using a wooden spatula to occasionally stir until the sugar turns a rich brown colour.
Take off stove and add water to stop the caramel from cooking further. Mix on gentle heat until all the caramel is dissolved into the water.
Divide into six ramekins or heatproof glass bowls equally. Set aside until needed.
Whisk together egg yolks, eggs, vanilla, and sugar until just combined. Do not overmix.
Heat milk until it's just starting to simmer.
Slowly pour milk into egg mixture while whisking until combined.
Strain the mixture and set aside.
