One Pot Pan Fried Dumplings
  1. Prepare the filling by combining ground pork, finely chopped lotus root, 2 tbsp soy sauce, 1 tbsp dark soy sauce, 1 tbsp sesame oil, and ½ tsp salt

  2. Fill dumpling wrappers with the pork and lotus root mixture

  3. Heat 2 tbsp cooking oil in a pan over medium-high heat

  4. Pan fry the dumplings until the bottoms are golden brown

  5. Prepare the filling water by steeping 1 tbsp sichuan peppercorn and 3 slices of ginger in a bowl of hot water

  6. Pour the hot filling water into the pan with the dumplings and cover

  7. Steam the dumplings until the water is absorbed and they are cooked through

  8. Prepare dipping sauce by mixing 2 tbsp soy sauce and 1 tbsp Chinese black vinegar

  9. Serve the dumplings with the dipping sauce
