Add the strawberry tops and water to a large saucepan.
Bring to a gentle simmer and cook for around 30 minutes, or until the liquid has reduced by about half.
Using a slotted spoon, remove and discard the strawberry tops.
Add the sugar and simmer for a further 15–20 minutes. remove any impurities with a spoon.
You should be left with approximately 400ml of cordial.
For a thicker, more syrupy consistency, continue reducing a little longer if desired.
Add 2 tablespoons of cordial to a glass filled with ice and sparkling water.
Stir and enjoy.
