Steep the Ginger: Add water, cloves and lime peel to a large pot. Bring to a boil, then turn off heat. Add the ginger and steep for 45 minutes. OR overnight for stronger kick.
Strain: Allow mixture to cool slightly. Strain using a fine sieve or cheesecloth into a large bowl or pitcher.
Sweeten & Flavor: While still warm, stir in brown sugar until dissolved.
Rest & Chill: Let ginger beer cool completely, then refrigerate for at least 4 hours or overnight for best flavor.
Serve: Serve cold over ice. Add rum if desired.
