Low Carb Shortcake (gluten Free Biscuits)
  1. Preheat the oven to 350F; line a large baking sheet with parchment paper or a silpat liner.

  2. Whisk together the almond flour, baking powder, salt, and sugar in a large bowl. Cut in the butter with a fork until it looks like coarse meal, and then cut in the cream cheese until combined. Use a fork to mix in the vanilla and almond extracts, and then the egg.

  3. Divide the dough into 4 equal portions onto the prepared baking sheet. Flatten some (they will spread a bit). Bake until golden on the bottom, about 20 minutes.

  4. Serve warm or at room temperature. Store in fridge, heat in toaster.
