Nasi Goreng
  1. Marinate the chicken in sweet soy, soy sauce, oil and garlic – give it 15 mins to soak up all that flavour.

  2. In a hot wok, cook the chicken until golden and slightly sticky, then set aside.

  3. In the same pan, sauté garlic and onion until fragrant.

  4. Push it to the side, scramble your eggs, then bring it all together.

  5. Add in the rice, break it up, and let it toast slightly.

  6. Season with sweet soy, sambal, salt and pepper.

  7. Toss the chicken back in with bean sprouts and spring onion.

  8. Serve it up with fresh tomato, cucumber, a fried egg if you like, and a wedge of lime to cut through the richness.
