Santorini Fava Dip
  1. Wash the peas well, then soak in water for 20 to 30 minutes.

  2. Boil them together with a bay leaf, garlic and white onion, until soft.

  3. Remove the foam that forms on top.

  4. Remove the bay leaf and add the mixture to a blender, add salt, olive oil and blend.

  5. Serve and top with onions, capers and more olive oil. Sometimes caramelised onions are used.
