Poached Chicken
Coconut Rice
Add 1tbsp oil to saucepan over medium heat
Add onion, fresh ginger, lemongrass, and cumin, cook until fragrant
Add coconut milk, chicken and increase to high heat. Bring to a gentle simmer
Cook 8 minutes, turning once
Once cooked, remove from heat & transfer into a bowl, keeping the sauce
Rinse rice well in sieve under cold running water
Place all ingredients in a saucepan of cold water and bring to the boil. Watch, only allow boiling for 1 minute
When boiling, turn down to low, cover with lid & simmer gently for 10 minutes
Remove from heat, leave lid on for another 15 minutes
Fluff with fork, top with toasted coconut & serve
