Pork Meatballs With Creamy Tomato Risoni
  1. Preheat oven to 220 degrees

  2. Mix pork mince with panko crumbs, paprika, Parmesan, onion, garlic, sundried tomatoes, parsley, salt and pepper

  3. Roll mixture into meatballs

  4. Spray meatballs with oil and bake for 20-25 minutes

  5. In a pan, add onion, garlic, sundried tomatoes, risoni and tomato paste, fry for a few minutes

  6. Add chicken stock and cook until risoni is just cooked

  7. Stir through cream, spinach and Parmesan

  8. Finish with a squeeze of lemon
