Making a souffle omelette
Separate the eggs.
Salt the yolks and mix.
In another bowl, beat whites until stiff peaks.
Add dollop of whites into yolk mix and mix
Pour yolk mix into whites bowl and fold lightly.
Heat pan on low and add butter. Pour in mixture then cover for 5-10 mins. Open, add filling, if wanted, then fold in half.
Serve.
