Start by finely chopping all the veggies.
Saute the onion in a drizzle of olive oil and once it wilts add the garlic, chili, tomato puree and the chopped tomato.
Stir everything then drop the heat to a medium. Cover and let the tomatoes cook for about 4 minutes or till nice and soft.
Season with salt, pepper, cumin powder, coriander powder then add the two cans of beans with a splash of water.
Once mixed let the beans cook for another 4-5 minutes to soften. Mash a couple of the beans just to thicken the sauce.
Spread the cheese on top. (use any cheese you like. Cream cheese is optimal)
Sprinkle some green on top. Have it with some bread a cup of tea and enjoy.
