Add the shallot, thyme, honey and vinegar to a small pan. Bring to a gentle simmer until just slightly thickened (it will thicken a lot as it cools). Turn off the heat and set aside
Press the goat's cheese in the almonds on both cut-sides so that the almonds stick to them. Place in the air fryer (in a single layer) and cook for 8 mins at 180c, or until the almonds are golden (check from time to time after 5 minutes)
Place the drained artichokes in the air fryer for 10-12 mins at 200c until crispy
Dress the radicchio and watercress with olive oil, salt, pepper and a good drizzle of the dressing
Transfer to a serving bowl, top with the crispy artichokes, goat's cheese and drizzle over the remaining dressing
