In a bowl, combine all the ssamjang ingredients: 2 tbsp doenjang, ½ tbsp gochujang, 2 tbsp chopped onion, 1 tsp sesame oil, 1 clove minced garlic, ½ tsp sesame seeds. Stir to thoroughly mix. Taste and adjust based on your preference.
In a bowl, combine all the cho ganjang ingredients: 1 tbsp soy sauce, 1 tbsp filtered water, ½ tbsp rice vinegar, ½ tbsp cane sugar, ½ clove garlic thinly sliced, ¼ jalapeno thinly sliced. Stir to thoroughly mix. Taste and adjust based on your preference.
Combine the 1 tsp kosher or sea salt, and ⅛ tsp black pepper in a small bowl, then divide amongst your dipping bowls. In each dipping bowl, divide the 1 tbsp sesame oil.
