[PREP] Mix aminos, molasses, fish sauce or oyster sauce, brown sugar, corn starch, & white pepper.
[MEDIUM HEAT] Sautee onion, garlic, chili, & pinch of salt and until onion turns translucent.
Add mushrooms & cook another 2 to 3 minutes. (If adding tofu, add now and cook another 2 mins)
Add aminos. Once sauce is sizzling add water & salt.
Add noodles and press them until covered with water. [COVER WITH LID] and cook 7 minutes.
Check if the noodles are cooked -- they may need up to 11 minutes.
[REMOVE LID], add remaining vegetables.
Add the sauce to the skillet and bring to a boil to thicken.
Add basil and green onion.
[REMOVE FROM HEAT, ADD LID] Let it sit 1-2 minutes, then serve.
