Prep: wash and chop your veggies (our buy them pre-cut 🫶🏼) and cut your chicken into bite size pieces. Preheat oven to 400 degrees.
Add your butternut squash, Brussel sprouts, red onion and oil. Stir. Bake for 15 minutes.
In a separate bowl toss your chicken in Dijon mustard and maple syrup.
Remove your bowls from the oven. Stir your roasted veggies and add your Dijon maple chicken to the top.
Bake for 40 minutes or until chicken reaches 160 degrees
