Preheat the oven to 420F / 220C
In an oven safe pan place the chicken breast cubes and add the rest of the ingredients except for the rice and water
Mix it all together. You can marinate it overnight for additional flavor
Add the rice and mix it. Pour 4 cups of boiling water and stir it a bit with a spoon
Cover with wet parchment paper and aluminum foil
Bake in a preheated oven at 420F for 45 minutes. Remove the cover and bake for 10 more minutes
Transfer the oven to convection broil on 450F and broil/grill for 5-7 minutes to get a nice golden crust
Garnish with Maldon flaky salt and chopped parsley and enjoy
