Soak fried tofu skin in hot water for a few seconds to rehydrate
Wash and cut enoki mushrooms into bite sized bunches
Wrap the delicate tofu skin into a roll with the mushrooms
Mix sauce: 1 tbsp soy sauce, 1 tbsp sesame oil, 2 tbsp chili crisp, ½ cup of broth or water
In a pan on medium heat, slowly pan fry onions
Layer tofu rolls on top of onions and pour sauce over
Gently let the rolls simmer covered with lid for 5 minutes
Serve and enjoy
